Kaiseki Yu-zen Hashimoto

Kaiseki cuisine has a reputation of being very expensive and not available to most people so Hashimoto added the word "Yu-zen" after "Kaiseki" in the name of his restaurant. This word "Yu-zen" allows Kaiseki be a little more flexible in the way it is prepared and served. Hashimoto’s goal was to let those who enjoy Japanese cuisine also be able to enjoy Kaiseki at a very affordable price. The word "Yu-zen" allows Kaiseki to be prepared according to the customer’s tastes. Of course, there is no menu of any sort; ingredients and courses served will be the chef’s choice, but changed at the customers request.

If you love traditional Japanese culture, this is a must-try experience—a true gem that captures the very essence of Japan. Dining here is far more than just a meal. The food is not just outstanding in flavor, but rich in history, philosophy, and the true spirit of omotenashi. You can taste the family's profound dedication to preserving this traditional art form with every course. It is likely one of the only restaurants in North America that serves Kaiseki in such an uncompromising traditional way. A truly beautiful, thought-provoking, and unforgettable experience ❤️

What an experience.

We entered the restaurant and it seemed like we were transported into Japan. We were led into a private room by our server and the ambiance was unlike anything else.

Our server was kind and gracious.

I can tell that all the dishes were prepared with love and care. This is Japanese cuisine that is so far beyond a regular Japanese restaurant. The attention to detail and intricacy on display were mind blowing.

The A3 Wagyu, dessert course, and the hand made crane were highlights.

The restaurant takes photos of all the food they serve and they email it to you after in case you do not want to take photos.

What a memorable experience.

Such a special Valentine’s Day dinner! We were seated in a completely private room, beautifully decorated. Each course was clearly prepared with a great deal of care and attention, with quality ingredients. Our favourite dish was the A5 Ribeye served over yam rice. Portions are small, but the dishes are well balanced. The experience was very elevated. They also gave us roses as we left, which I found to be a thoughtful touch! The chef as well spoke with us afterwards and shared his love for Kyoto. Bonus points for location - we had the chance to explore the Japanese Cultural centre before our dinner.

Absolutely amazing experience. For 3.5 hours, it felt like my wife and I stepped back into Kyoto and reimmersed in the culture.
Every single dish was a work of art with amazing quality and authentic Japanese ingredients.
The service was immaculate and you can tell that customer service and the preservation of the Japanese culture are their key priorities. Our main hostess (I believe her name was Iori) and K the main chef spent time with us explaining every single dish and taught us a lot about the Japanese culture.

It was the best birthday celebration for my wife! Highly recommend!

One of the best restaurant experiences of my almost half a century in this planet. Had been dreaming of going for years, since my trip to Kyoto and a meal here is like going to Kyoto for the evening. The decor is incredibly beautiful, as are the dishes and the service. The staff are charming and elegant. Each course was a feast for the eyes and the taste buds. We especially enjoyed the broths and we were able to ask the chef about them when he came to talk to us after the meal. We appreciated everything about the meal and will remember it for the rest of our lives. If you can afford it, do not delay. It was worth every penny.
